What is Mechalore?

 

Mechalore is a combination of the words ‘mechanism’ and ‘lore’ which is symbolic of our approach to meadmaking. Each ingredient, or mechanism, is a smaller piece of a larger machine, the finished mead. The lore is the stories created in the names of each mead and the greater story of our meadery. The combined name is a recognition of our modern methods with a nod toward the historical past of mead.

 

 

What is Mead?

 

Mead, AKA Honey Wine, is an alcoholic beverage that is made from honey instead of grape juice (wine), fruit (fruit wine), rice (rice wine/sake) or malt (beer). Mechalore MeadWorks’ meads are made using modern meadmaking methods which produces meads that highlight the flavors of the honey.

We source our honey and ingredients regionally, nationally, and globally to be able to integrate the best flavors into our meads without imposing limits on what we can create. Our meads are made with a global, culinary influence and are intended to excite and differentiate our brand from the rest of the (relatively small) industry.

Nowhere to Hide is our traditional mead made from a constantly changing selection of honey and sweetness levels. This is
Volume #1, made with Zambian wildflower honey that is fermented with Rocky Mountain water. It has a robust honey flavor with notes of coffee, tobacco, black tea, and cacao. We aged this mead on Hungarian Oak and finished it off-dry to leave a full impression of the honey on the palate.

Beneath a Broken Sky is our wildflower honey Metheglin (spiced honey wine) flavored with Ancho Chiles and Rooibos tea. We complemented the natural cinnamon and spice notes of the wildflower honey with the earthy spiciness and vanilla notes in the Rooibos tea, then finished it off with the fruity warmth of the Ancho Chiles. Share this one with friends around a fire with a bowl of chili and cornbread or after dinner with S’mores.

Mortal Coil is a Capsimel (honey wine with chile peppers) that is made with Orange Blossom Honey, flavored with Hatch Green Chiles and  Rocky Mountain water. A fiery burst of medium spice roasted pepper spiciness is curbed by the sweetness of orange blossom honey. This pairs well with street tacos or carne asada or can be drank as a spicy “meadmosa” by blending with fresh squeezed orange juice.

Finishes semi-sweet and pairs perfectly with coffee, eggs, and breakfast sausage or enjoy it as a “breakfast all day” on its own.

How does Mechalore MeadWorks make mead?

 

We;re not like all the other meads. Mechalore MeadWorks is redefining the mead industry by creating meads designed to appeal to the craft beer consumer. We use a modern approach to meadmaking which produces cleaner tasting meads than those produced by traditional methods. We focus on bold flavors and radical experimentation in our ever changing rotating lineup of meads. We are releasing new meads every quarter with one traditional mead focusing on a different honey, sweetness, carbonation, alcohol strength, etc. and three specialty meads that focus on creating fun new flavors that push the boundaries of the craft.

 

Why are some products called Mead and some called Honey Wine?

 

Under current federal regulations, a beverage made with honey, water, and yeast may be referred to as Mead but the addition of other ingredients requires the product to be called a Honey Wine. It may be confusing but the products come from from the same base ingredients of honey, water, and yeast.
